Quick Easy Dinner

We all lead such busy lives today that we are always looking for dinner ideas and cheap easy quick dinner ideas are definitely the best ones.

I asked a few people what their suggestions were if they had to prepare dinner in under 10 minutes. Overwhelmingly the response was pasta.

Pasta with fresh ingredients, pasta with pesto sauce and pasta with tomato sauce were all suggestions.

I have been known to cook pasta on a night when I'm running out of time but it usually takes me more than 10 minutes and sometimes I need to eat a lot sooner than the pasta can cook.

Here is my easy dinner recipe that will take you less than 10 minutes to prepare, cook and have ready to eat from my student days which means it is a cheap dinner idea as well.

First up I always have english muffins in my freezer and they come in handy on those busy nights.

To serve one:

2 english muffins

tomatoes

capsicum, mushrooms, olives and any other vegies you like

pineapple pieces

tomato paste or pesto sauce

ham or salami if you'd like

Cheese: feta, bococini and/or tasty

I bet you can guess where this is going, mini pizzas of course!

Now defrost your english muffins and while they are in the microwave, turn the grill on high and place alfoil on an oven tray.

Get your vegies and other supplies out of the fridge ready to cut up.

Place your muffins, cut in half, upside down on the oven tray and place under the grill. We want them toasty on the bottom but not crunchy. This should take around 1 minute under the grill.

While the muffin bottoms are toasting, drain your pineapple pieces and olives, cut up your vegies and meat and slice some cheese.

Take out the muffins, turn them up the right way, place on your choice of sauce and your toppings. Layer the sliced cheese on top and put back in under the grill.

Grill until the cheese is golden which is another minute, maybe two depending on your oven.

Another good thing is you can pick them up in your hand and eat them on the run if you don't have time to sit down and eat them.

Once you've made these once I guarantee you will be able to make them in under ten minutes making them a great idea for those nights when life is just to busy.  It's a great easy dinner recipe that allows you to use up whatever is left in the fridge and having a few english muffins in the freezer won't take up to much room. A good one to add to your dinner recipes when it gets close to grocery shopping day as well.
